  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup melted coconut oil (substituting unsalted butter)
  • 1/2 cup chopped pecans
  • 1 cup packed brown sugar (for the gooey layer)
  • 1 1/2 cups boiling water
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, whole milk, egg, vanilla extract, cinnamon, nutmeg, ginger, cloves, and salt. Mix until smooth.
  3. In another bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt. Add melted coconut oil and stir until just combined.
  4. Pour the pumpkin mixture into a greased baking dish and spoon dollops of the cobbler topping over it. Sprinkle with chopped pecans.
  5. Evenly sprinkle brown sugar on top and carefully pour boiling water over everything without stirring.
  6. Bake for approximately 50 minutes until golden brown on top.
