Instructions

  1. Preheat your oven to 375°F (190°C). Line a jelly roll pan with parchment paper and spray with non-stick spray.
  2. In a large bowl, whisk eggs for about 30 seconds. Add sugar, pumpkin puree, and vanilla; mix well. Gradually incorporate flour, baking powder, pumpkin pie spice, and salt until smooth.
  3. Spread the batter evenly in the prepared pan. Bake for 15 minutes or until a toothpick inserted into the center comes out clean.
