- 1 ½ cups graham cracker crumbs

- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- ¼ cup granulated sugar
- 1 large egg yolk
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground ginger
Instructions
- Preheat your oven to 325°F (163°C). Line a 9×9 inch baking pan with parchment paper.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into the bottom of the prepared pan and bake for 10 minutes.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- In another bowl, combine pumpkin puree, sugar, egg yolk, cinnamon, nutmeg, and ginger until smooth.
- Pour cheesecake filling over the cooled crust. Drop spoonfuls of the pumpkin mixture onto the cheesecake layer and swirl gently with a knife.
- Bake for about 45 minutes until the center is set but jiggles slightly. Cool completely before refrigerating for at least four hours or overnight.
