Ingredients
- 2 cups cooked jasmine rice
- 3 cups shredded cabbage
- 1 cup sliced cucumber
- 1 red bell pepper
- 1 medium carrot
- 1/2 cup sugar snap peas
- 2 tbsp peanut butter or tahini
- 3 tbsp sesame oil
- 2 tbsp rice vinegar
- Juice of 1 lime
- 1 tbsp honey
- 1 tbsp soy sauce or tamari
- 1 tbsp chili crisp
- 1/2 inch piece ginger, grated
- Salt and pepper, to taste
- Toasted sesame seeds, garnish
Instructions
- In a mixing bowl, whisk together sesame oil, peanut butter or tahini, soy sauce or tamari, rice vinegar, lime juice, honey, chili crisp, and grated ginger until smooth.
- In another large bowl, combine cooked jasmine rice with sesame oil and soy sauce or tamari. Gently toss until coated.
- Add shredded cabbage, cucumber slices, bell pepper, grated carrot, sugar snap peas, and green onions to the rice mixture. Toss gently to combine.
- Pour the dressing over the salad and mix well until evenly coated.
- Garnish with toasted sesame seeds before serving.
