  • 1 whole roasted red pepper (jarred)
  • 200g feta cheese
  • 150g Greek yogurt
  • 2 large baking potatoes
  • 1 tin (400g) chickpeas
  • 3 cloves roasted garlic
  • Fresh parsley
  • Walnuts
  • Olive oil

Instructions

  1. Preheat oven to 400F (200C).
  2. Cube potatoes and combine with drained chickpeas in a baking dish. Drizzle with olive oil, sprinkle thyme, rosemary, salt, and pepper, then toss to coat.
  3. Roast for 45 minutes, flipping halfway through.
  4. In a food processor, blend all dip ingredients until smooth: roasted red pepper, feta cheese, Greek yogurt, roasted garlic, lemon juice, oil from red peppers, and black pepper. Chill while vegetables roast.
  5. Toss the roasted vegetables with the walnut and pepper dressing before serving over the whipped feta dip.
