- 1 lime (juiced)

- ⅛ tsp black pepper (plus extra to taste)
- ⅛ tsp dried oregano
- 1 cup fresh chopped cilantro (or to taste)
- 1–2 Roma tomatoes (for topping, optional but so tasty!)
Instructions
- Preheat oven to broil on high. Line a rimmed baking sheet with parchment paper.
- Prepare vegetables: slice jalapeños based on desired spice level (whole for heat or seeds removed for milder salsa).
- Spread cherry tomatoes, onion, and jalapeños on the baking sheet. Roast for 5 minutes, then rotate the pan and roast for another 5 minutes.
- Allow veggies to cool slightly, then transfer them to a food processor along with any juices from the pan. Pulse until desired consistency is reached.
- Stir in chopped cilantro and any additional Roma tomatoes if using.
- Chill in the fridge before serving.
