- 1 large head cauliflower (about 4–5 cups florets)
- 3 tablespoons olive oil
- 1 head garlic
- 1 medium yellow onion, diced
- 4 cups vegetable broth (or chicken broth)
- 1 heaping cup shredded sharp cheddar cheese
- Freshly ground salt and pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss cauliflower florets with 1-2 tablespoons of olive oil and season with salt and pepper. Prepare the garlic by cutting off the top of the head, drizzling with olive oil, wrapping in foil, and placing both the cauliflower and garlic on the baking sheet.
- Roast for 30-35 minutes until golden and caramelized.
- Meanwhile, heat 1 tablespoon of olive oil in a medium pot over medium heat, then sauté the diced onion until translucent.
- Once roasted, blend together the cauliflower, squeezed garlic cloves from their skins, sautéed onion, broth, salt, and pepper until smooth.
- Return to pot over medium heat and stir in shredded cheddar cheese until melted. Simmer for an additional 10-15 minutes before serving.
