  • 5 tablespoons butter
  • 2 leeks, chopped
  • 2 large carrots, sliced
  • 6 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 pound fresh mushrooms, sliced
  • 1 cup half-and-half
  • ¼ cup all-purpose flour
  • Dried dill weed, salt, and pepper to taste

Instructions

  1. In a large saucepan, melt 3 tablespoons of butter over medium heat. Add leeks and carrots; sauté for about 5 minutes until they soften.
  2. Pour in the chicken broth and season with dill weed, salt, pepper, and bay leaf. Stir to combine.
  3. Add diced potatoes to the pot. Cover and cook for approximately 20 minutes until the potatoes are tender.
  4. In a skillet, melt the remaining butter over medium heat; sauté sliced mushrooms for about 5 minutes until browned. Add them to the soup pot.
  5. Whisk together half-and-half and flour in a small bowl until smooth. Gradually stir this mixture into the soup to thicken.
  6. Remove bay leaf before serving garnished with fresh dill.
