  • 4 large egg yolks
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup light brown sugar
  • 1/3 cup cornstarch
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt (for sprinkling)

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch pie pan and chill it in the fridge.
  2. In a medium saucepan, whisk together heavy cream, brown sugar, cornstarch, and salt over medium heat until it reaches a rolling boil.
  3. Remove from heat and temper the egg yolks by gradually whisking hot cream into them.
  4. Pour the tempered egg mixture back into the saucepan, stir in honey and vanilla until smooth.
  5. Pour the custard into the chilled crust and bake at 375°F (190°C) for 40-45 minutes until golden brown.
  6. Allow to cool completely before refrigerating. Sprinkle with flaky sea salt before serving.
