  • 1/2 cup honey
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 teaspoon coarse sea salt
  • 1 teaspoon baking soda
  • 2 1/2 cups all-purpose flour
  • 1 cup chopped pistachios
  • 1 cup white chocolate chips (optional)
  • Flaked sea salt for garnish (optional)

Instructions

  1. Brown the butter in a medium saucepan over medium-low heat until it turns deep amber, about 5 minutes. Let it cool for 20-30 minutes.
  2. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a stand mixer, combine cooled browned butter, light brown sugar, granulated sugar, honey, egg, vanilla extract, sea salt, and baking soda. Mix on medium speed for one minute.
  4. Gradually add all-purpose flour at low speed until just combined. Gently fold in chopped pistachios and white chocolate chips (if using).
  5. Using a medium cookie scoop, place dough on the prepared baking sheet about 2 inches apart. Bake for approximately 8 minutes or until edges are lightly golden.
  6. Cool on the baking sheet for 3-4 minutes before transferring to a wire rack.
