Ingredients

Scale
  • 1 lb ground turkey sausage
  • 1 yellow onion (diced)
  • ½ cup diced carrots
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 ¼ lbs red potatoes (chopped)
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • ½ teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon mustard powder
  • ¼ teaspoon pepper
  • 3 tablespoons flour
  • 1 teaspoon soy sauce
  • 1 teaspoon hot sauce

Instructions

  1. In a large pot over medium heat, melt butter. Add diced onions, carrots, and celery; sauté for about 5-7 minutes until softened.
  2. Stir in ground turkey sausage and cook until browned (about 5-7 minutes). Add minced garlic and cook for another minute.
  3. Sprinkle flour over the mixture to thicken the soup base. Gradually pour in chicken broth while stirring continuously.
  4. Add chopped potatoes along with dried herbs and hot sauce. Bring to a boil, then reduce heat and simmer for about 30 minutes until potatoes are tender.
  5. Finally, stir in heavy cream and heat through for an additional 5 minutes before serving.
