- 2 cups freshly shredded extra-sharp Cheddar cheese
- 1/4 cup sour cream

Instructions
- In a large pot over medium-high heat, cook the Italian sausage until browned. Drain excess fat and set aside.
- In the same pot, melt 1 tablespoon of butter. Sauté mirepoix until softened, about 5–7 minutes. Add minced garlic and cook for an additional 30 seconds.
- Stir in chopped potatoes, dried herbs, salt, and pepper. Pour in chicken stock and bring to a boil; then reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Meanwhile, in a separate pot, melt butter for the creamy mixture; whisk in flour until smooth and gradually add milk and cream until thickened.
- Combine the creamy mixture with the soup base off heat. Stir in cheese until melted; add sausage back into the pot and adjust seasoning if needed.
