Ingredients
- 2 acorn squash
- ½ pound ground turkey sausage
- 1 tablespoon olive oil
- ½ large onion (diced)
- 3 cups kale (cleaned and chopped)
- 1 tablespoon garlic (minced)
- 2 stalks celery (chopped)
- ½ large apple (chopped)
- ½ teaspoon fresh minced thyme
- 2 sage leaves (minced)
- 1 teaspoon minced fresh rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons walnuts or pecans
- ½ cup crumbled feta cheese
Instructions
- Preheat your oven to 400°F and line a cookie sheet with parchment paper.
- Halve the acorn squashes lengthwise and scoop out the seeds.
- Place the squash cut side down on the cookie sheet and bake for approximately 20 minutes until tender.
- In a large skillet, cook the ground turkey sausage over medium heat until browned; set aside.
- In the same skillet, heat olive oil and sauté diced onion until softened. Add kale, garlic, celery, apple, and fresh herbs; cook for an additional 4–5 minutes.
- Remove baked squash from the oven, mix some flesh into the skillet with the cooked sausage, season to taste.
- Fill each squash half with the mixture and return to the oven for another 15 minutes.
- Sprinkle with feta cheese and nuts; bake an additional 5 minutes until cheese melts.
