  • 2 acorn squash
  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F and line a cookie sheet with parchment paper.
  2. Halve the acorn squashes lengthwise and scoop out the seeds.
  3. Place the squash cut side down on the cookie sheet and bake for approximately 20 minutes until tender.
  4. In a large skillet, cook the ground turkey sausage over medium heat until browned; set aside.
  5. In the same skillet, heat olive oil and sauté diced onion until softened. Add kale, garlic, celery, apple, and fresh herbs; cook for an additional 4–5 minutes.
  6. Remove baked squash from the oven, mix some flesh into the skillet with the cooked sausage, season to taste.
  7. Fill each squash half with the mixture and return to the oven for another 15 minutes.
  8. Sprinkle with feta cheese and nuts; bake an additional 5 minutes until cheese melts.
