Ingredients
- 12 ounces fettuccine or penne pasta
- 1 medium-sized butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 10–12 fresh sage leaves, chopped
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Toss butternut squash cubes in olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
- In a large pot of boiling salted water, cook pasta according to package instructions until al dente. Reserve about ½ cup of the pasta water before draining.
- In a skillet over medium heat, sauté diced onion in olive oil until translucent (about 5 minutes). Add garlic and sage; cook for another minute.
- Combine roasted squash with sautéed onion and garlic in the skillet. Stir in heavy cream and mix well.
- Add cooked pasta and reserved pasta water as needed to reach desired consistency. Mix in Parmesan cheese until melted.
- Serve warm, garnished with extra Parmesan cheese and fresh sage if desired.
