  • 1 tablespoon granulated sugar
  • 2.5 teaspoons baking powder
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons chopped fresh chives
  • 1 cup shredded cheddar cheese
  • 1/2 cup unsalted butter (frozen)
  • 2/3 cup cold buttermilk
  • 1 large egg (separated)
  • 3/4 cup finely chopped cooked chicken

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, garlic powder, salt, and black pepper. Stir in chives and cheese.
  3. Grate the frozen butter and combine it with the dry mixture until crumbly. Refrigerate while preparing wet ingredients.
  4. In another bowl, mix buttermilk and egg yolk; add to the flour mixture along with chopped chicken. Mix until dough forms.
  5. Transfer dough to a floured surface; shape into an 8-inch disc and cut into wedges (or drop spoonfuls onto the sheet).
  6. Brush tops with egg white mixture and sprinkle with flaky sea salt if desired.
  7. Bake for about 22-25 minutes until golden brown.
