- 5 Tbsp butter (divided)
- 32 oz package frozen whole kernel corn (thawed)
- 1 1/2 cups half-and-half
- 3 large eggs
- 2 Tbsp granulated sugar
- 1/2 tsp salt
- 1/8 tsp ground nutmeg
- 1 1/2 cups sharp white cheddar or pepper-jack cheese (divided)
- 1 sleeve round butter crackers (crushed and divided)
Instructions
- Preheat the oven to 325°F and butter a 13×9-inch baking dish.
- In a medium bowl, whisk together half-and-half, eggs, sugar, salt, and nutmeg until well combined.
- In a large bowl, mix the thawed corn with the egg mixture, adding in 3/4 cup of cheese and 1/2 cup of crushed crackers. Stir well.
- Transfer the mixture into the prepared baking dish and bake for about 30 minutes.
- While baking, melt the remaining butter and combine it with the leftover cracker crumbs for topping.
- After 30 minutes, remove from the oven, sprinkle with reserved cheese and cracker topping, then return to bake for another 20-30 minutes until golden brown.
- Let stand for about 5 minutes before serving.
