Description

Scalloped Corn is a creamy, cheesy casserole that serves as the perfect side dish for any meal. This comforting dish combines sweet corn with sharp cheddar cheese and buttery cracker crumbs, creating a rich flavor that’s sure to please family and guests alike.


Ingredients

  • 5 Tbsp butter (divided)
  • 32 oz package frozen whole kernel corn (thawed)
  • 1 1/2 cups half-and-half
  • 3 large eggs
  • 2 Tbsp granulated sugar
  • 1/2 tsp salt
  • 1/8 tsp ground nutmeg
  • 1 1/2 cups sharp white cheddar or pepper-jack cheese (divided)
  • 1 sleeve round butter crackers (crushed and divided)

Instructions

  1. Preheat the oven to 325°F and butter a 13×9-inch baking dish.
  2. In a medium bowl, whisk together half-and-half, eggs, sugar, salt, and nutmeg until well combined.
  3. In a large bowl, mix the thawed corn with the egg mixture, adding in 3/4 cup of cheese and 1/2 cup of crushed crackers. Stir well.
  4. Transfer the mixture into the prepared baking dish and bake for about 30 minutes.
  5. While baking, melt the remaining butter and combine it with the leftover cracker crumbs for topping.
  6. After 30 minutes, remove from the oven, sprinkle with reserved cheese and cracker topping, then return to bake for another 20-30 minutes until golden brown.
  7. Let stand for about 5 minutes before serving.
