  • 6 medium russet or sweet potatoes
  • 1 1/2 pounds lean ground beef or turkey
  • 1/2 cup chopped onion
  • 2 large carrots (about 1 cup), chopped small
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons tomato paste
  • 2 1/2 cups low sodium beef or chicken broth
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 12 cups shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare six pieces of aluminum foil large enough to wrap each potato.
  2. Rub butter on the foil and sprinkle salt and pepper over it. Place one potato in the center and wrap it tightly.
  3. Pierce each potato several times with a fork and arrange them on a baking sheet. Bake for about one hour until tender.
  4. In a large skillet, cook ground meat with onion, carrots, garlic, salt, and pepper over medium heat until browned and vegetables soften.
  5. Stir in flour for one minute; then add tomato paste and broth. Simmer for about ten minutes until thickened.
  6. Incorporate frozen corn and peas into the filling mixture until heated through.
  7. Slice open baked potatoes and fill generously with the meat mixture; top with cheese before serving.
