Ingredients

  • 470 grams all-purpose flour
  • 1 teaspoon salt
  • 40 grams sugar
  • 230 grams water
  • 150 grams active sourdough starter
  • 50 grams unsalted butter (for dough)
  • 250 grams unsalted butter (for layering)
  • 1 egg (for wash)
  • 1 tablespoon water (for wash)

Instructions

  1. Mix dough ingredients in a stand mixer on low speed, then medium speed for 10–15 minutes until smooth and slightly sticky.
  2. Place the dough in a bowl, cover, and let it ferment at room temperature for 4–6 hours. Perform stretch and folds during the first two hours. Refrigerate overnight.
  3. Prepare the butter packet by cutting butter into pieces and shaping it into a rectangle between parchment paper. Chill until firm.
  4. Roll out chilled dough into a rectangle, place the butter packet in the center, and fold over to enclose.
  5. Laminate the dough by rolling it out into a larger rectangle, folding it into thirds like a letter, and chilling several times.
  6. Shape into croissants by cutting triangles from rolled-out dough and rolling them up from base to tip.
  7. Proof shaped croissants at room temperature for about 4–6 hours until puffy.
  8. Preheat oven to 205°C (400°F), brush croissants with egg wash, and bake for 20–25 minutes until golden brown.
  9. Cool slightly before serving.
