Description

Crock Pot Chicken Jambalaya is a hearty, one-pot meal that effortlessly combines the rich flavors of tender chicken, spicy sausage, and vibrant vegetables.


Ingredients

  • 1 1/2 lbs chicken breasts (diced)
  • 1 lb andouille sausage (sliced)
  • 1/2 onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 2 stalks celery (sliced)
  • 2 tsp minced garlic
  • 1 can crushed tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 Tbsp Cajun seasoning
  • 3 cups cooked rice

Instructions

  1. Prepare your ingredients: Dice the chicken and sausage, and chop the vegetables.
  2. Combine all ingredients except the cooked rice in the slow cooker.
  3. Cook on low for 6-8 hours or high for 3-4 hours until chicken is fully cooked.
  4. Stir in cooked rice and serve warm.
