- 1 1/2 lbs chicken breasts (diced)
- 1 lb andouille sausage (sliced)
- 1/2 onion (diced)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 2 stalks celery (sliced)
- 2 tsp minced garlic
- 1 can crushed tomatoes (14.5 oz)
- 1 cup chicken broth
- 1 Tbsp Cajun seasoning
- 3 cups cooked rice
Instructions
- Prepare your ingredients: Dice the chicken and sausage, and chop the vegetables.
- Combine all ingredients except the cooked rice in the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is fully cooked.
- Stir in cooked rice and serve warm.
