  • 1/4 cup honey
  • 3 tablespoons whole grain Dijon mustard
  • 1/4 cup water
  • 2 cups chopped red cabbage
  • 1/4 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons water (additional)
  • 2 teaspoons cornstarch
  • Pinch of salt
  • Pinch of pepper
  • 1 teaspoon whole grain Dijon mustard
  • 2 teaspoons honey (additional)
  • 2 teaspoons sugar

Instructions

  1. Place chicken thighs in the slow cooker and pour in honey, mustard, and water.
  2. Cover and cook on low for about 4 hours until the chicken is tender.
  3. Remove chicken and shred using two forks.
  4. In a bowl, combine additional water with cornstarch to create a slurry; mix well.
  5. Return shredded chicken to the slow cooker along with cabbage, olive oil, vinegar, salt, pepper, mustard, honey, and sugar; stir to combine.
  6. Cook on low for an additional 15-30 minutes before serving.
