- 2 cups chopped red cabbage
- 1/4 cup olive oil
- 3 tablespoons apple cider vinegar
- 2 tablespoons water (additional)
- 2 teaspoons cornstarch
- Pinch of salt
- Pinch of pepper
- 1 teaspoon whole grain Dijon mustard
- 2 teaspoons honey (additional)
- 2 teaspoons sugar
Instructions
- Place chicken thighs in the slow cooker and pour in honey, mustard, and water.
- Cover and cook on low for about 4 hours until the chicken is tender.
- Remove chicken and shred using two forks.
- In a bowl, combine additional water with cornstarch to create a slurry; mix well.
- Return shredded chicken to the slow cooker along with cabbage, olive oil, vinegar, salt, pepper, mustard, honey, and sugar; stir to combine.
