  • 3 extremely ripe bananas, mashed
  • ½ cup melted butter
  • ¾ cup Domino® Golden Sugar (plus extra for cinnamon sugar)
  • 2 eggs
  • ½ cup Greek yogurt
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • Butter, for coating loaf pan

Instructions

  1. Preheat your oven to 350ºF and grease a loaf pan with butter.
  2. In a small bowl, mix ½ cup of Domino® Golden Sugar with 2 teaspoons of cinnamon. Coat the inside of the loaf pan with this mixture.
  3. In a large bowl, whisk together the mashed bananas and melted butter until combined. Add the remaining sugar, eggs, Greek yogurt, and vanilla extract; stir until smooth.
  4. In another bowl, combine all-purpose flour, baking soda, and salt. Gently fold into the wet mixture until just combined.
  5. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon sugar mixture over it. Add the remaining batter and top with any leftover cinnamon sugar.
  6. Bake for about 60 minutes or until a knife inserted in the center comes out clean. Allow cooling for 15 minutes before removing from the pan.
