  • 1 cup sourdough discard
  • 1/2 cup warm water
  • 2 teaspoons active dry yeast
  • 1 tablespoon sugar or honey
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon melted butter
  • 1/4 cup baking soda (for boiling)
  • Coarse sea salt (for topping)

Instructions

  1. In a large bowl, mix warm water, sugar or honey, and yeast. Let sit for 5–10 minutes until foamy.
  2. Add the sourdough discard, flour, salt, and melted butter to the yeast mixture. Stir until a soft dough forms.
  3. Knead the dough for 5–7 minutes until smooth and elastic. Cover and let rise for 1–2 hours until doubled in size.
  4. Preheat the oven to 425°F (220°C).
  5. Divide the dough into portions, roll into ropes about 12 inches long, and cut into bite-sized pieces.
  6. Boil water in a pot with baking soda and boil each piece for 30 seconds before transferring them to a lined baking sheet.
  7. Sprinkle with coarse sea salt and bake for 12–15 minutes until golden brown.
  8. Let cool slightly before serving.
