Ingredients
- 1 cup sourdough discard
- 1/2 cup warm water
- 2 teaspoons active dry yeast
- 1 tablespoon sugar or honey
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon melted butter
- 1/4 cup baking soda (for boiling)
- Coarse sea salt (for topping)
Instructions
- In a large bowl, mix warm water, sugar or honey, and yeast. Let sit for 5–10 minutes until foamy.
- Add the sourdough discard, flour, salt, and melted butter to the yeast mixture. Stir until a soft dough forms.
- Knead the dough for 5–7 minutes until smooth and elastic. Cover and let rise for 1–2 hours until doubled in size.
- Preheat the oven to 425°F (220°C).
- Divide the dough into portions, roll into ropes about 12 inches long, and cut into bite-sized pieces.
- Boil water in a pot with baking soda and boil each piece for 30 seconds before transferring them to a lined baking sheet.
- Sprinkle with coarse sea salt and bake for 12–15 minutes until golden brown.
- Let cool slightly before serving.
