Ingredients
- 4 large organic sweet potatoes
- 2–3 tablespoons extra virgin olive oil
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup almond milk
- 2 tsps vanilla extract
- 4 tablespoons unsalted butter
- 1/3 cup organic brown sugar
- 1/4 cup pure maple syrup
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- Pinch of ground allspice
- 1 cup organic raisins
- 2 cups vegan marshmallows
- 1 1/2 cups raw pecans
Instructions
- Peel and cube the sweet potatoes, then boil them in water until tender (15-20 minutes). Drain and mash in a bowl.
- Stir in olive oil, almond milk, vanilla extract, cinnamon, nutmeg, and cubed unsalted butter until smooth.
- Preheat oven to 350°F (175°C). Transfer the sweet potato mixture to a baking dish.
- In another bowl, combine brown sugar, maple syrup, spices, soaked raisins, vegan marshmallows, and pecans. Spread this topping over the sweet potatoes.
- Bake for about 90 minutes or until golden on top.
