Ingredients

  • 1 cup Japanese sushi rice
  • 1 ½ cups water
  • 1 teaspoon sugar
  • 1 ½ tablespoon rice apple vinegar
  • Pinch of sea salt
  • 7 oz / 200 g fresh sushi grade ahi tuna
  • 2 tablespoons Japanese kewpie mayonnaise (preferred) or regular mayonnaise
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon soy sauce
  • Small drizzle of sesame oil
  • Furikake
  • Jalapeño slices
  • Avocado slices or smashed avocado

Instructions

  1. 1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan, boil, then simmer for 20 minutes. Let sit covered for 10 minutes.
  2. 2. Fluff the rice and mix in sugar, rice vinegar, and salt. Press onto a sushi mat to form cakes.
  3. 3. Heat oil in a skillet and fry rice cakes until golden brown on both sides (3-4 minutes each).
  4. 4. Dice tuna, combine with mayonnaise, sriracha, soy sauce, and sesame oil.
  5. 5. Top each fried rice cake with tuna mixture and garnish as desired.
