  • Homemade pie crust
  • 2 teaspoons olive oil
  • 1 small yellow onion (diced)
  • 1 1/2 cups spinach (chopped)
  • 6 slices turkey bacon (cooked and crumbled)
  • 3/4 cup gruyere cheese
  • 3/4 cup Colby jack cheese
  • 4 large eggs
  • 3/4 cups milk
  • 1/2 cup heavy cream
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the homemade pie crust and fit it into a pie dish. Set aside.
  3. In a skillet over medium heat, add olive oil and sauté diced onion until translucent. Add chopped spinach and cook until wilted. Remove from heat.
  4. In a mixing bowl, whisk together eggs, milk, heavy cream, salt, and black pepper.
  5. Fold in the sautéed onion and spinach mixture along with crumbled turkey bacon and both cheeses.
  6. Pour the filling into the prepared pie crust and spread evenly.
  7. Bake for about 55 minutes or until set and golden on top.
  8. Allow cooling for 10 minutes before slicing.
