Ingredients
- Homemade pie crust
- 2 teaspoons olive oil
- 1 small yellow onion (diced)
- 1 1/2 cups spinach (chopped)
- 6 slices turkey bacon (cooked and crumbled)
- 3/4 cup gruyere cheese
- 3/4 cup Colby jack cheese
- 4 large eggs
- 3/4 cups milk
- 1/2 cup heavy cream
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the homemade pie crust and fit it into a pie dish. Set aside.
- In a skillet over medium heat, add olive oil and sauté diced onion until translucent. Add chopped spinach and cook until wilted. Remove from heat.
- In a mixing bowl, whisk together eggs, milk, heavy cream, salt, and black pepper.
- Fold in the sautéed onion and spinach mixture along with crumbled turkey bacon and both cheeses.
