- 1 1/2 cups chopped yellow onion
- 1 1/4 cups chopped celery

- 1 (16 oz) bag dried split peas, picked over and rinsed
- 2 bay leaves
- 1 1/2 tsp chopped fresh thyme
- Salt and freshly ground black pepper
- 1 1/2 lb meaty chicken bone or shank
- 1 cup chopped carrots
Instructions
- In a large pot, heat the olive oil over medium-high heat. Sauté onions and celery for about three minutes until softened; add garlic and cook for another minute.
- Pour in the chicken broth and water, then add split peas, bay leaves, thyme, salt, and pepper.
- Nestle the chicken bone into the mixture; bring to a boil, then reduce heat to low and cover. Simmer for 60-80 minutes until peas are tender.
- Remove the chicken bone once cooked; let cool slightly before shredding the meat.
- Stir in carrots and continue simmering for an additional 30 minutes until most peas have broken down.
- Return shredded chicken to the pot; adjust seasoning if necessary.
