- 4 sweet potatoes (about 2 lbs), peeled and sliced into 1-inch rounds
- ¼ cup melted butter
- ½ teaspoon salt
- 2 tablespoons maple syrup
- 12 regular-sized vegan marshmallows, halved
- 24 pecan halves
Instructions
- Preheat your oven to 425°F (220°C) and grease a baking sheet.
- Arrange sweet potato slices on the baking sheet, drizzle with melted butter, toss to coat, and season with salt.
- Roast for about 20 minutes, flip, then roast for another 15-20 minutes until fork-tender.
- Set the oven to broil. Drizzle maple syrup over the sweet potatoes and top with halved vegan marshmallows.
- Broil for 1-3 minutes until the marshmallows are lightly toasted—keep an eye on them!
- Press a pecan half into each toasted marshmallow immediately after removing from the oven. Serve warm.
