Ingredients
- 1 cup cooked sweet potato
- 1/2 cup cocoa powder
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup mini chocolate chips (optional)
Instructions
- Cook the sweet potatoes until tender. Allow them to cool before peeling and measuring out one cup.
- In a food processor, combine the cooked sweet potato and cocoa powder. Pulse until smooth.
- Add the almond butter and maple syrup to the mixture and process until fully blended.
- Fold in half of the mini chocolate chips into the batter.
- Pour the mixture into an 8X8 baking dish coated with coconut oil spray and sprinkle remaining chocolate chips on top.
- Preheat your oven to 350°F (175°C) and bake for 15-25 minutes. Check doneness by shaking the pan; they should not jiggle.
