Ingredients
- 1 cup mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup buttermilk
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/2 cup granulated sugar for cinnamon swirl
- 1 tbsp ground cinnamon for cinnamon swirl
- 1 cup powdered sugar for glaze
- 2 tbsp milk for glaze
- 1/2 tsp vanilla extract for glaze
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, vegetable oil, eggs, buttermilk, and vanilla extract until smooth.
- In another bowl, sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Prepare the cinnamon swirl by mixing sugar with ground cinnamon in a small bowl.
- Pour half of the batter into the prepared pan; sprinkle half of the cinnamon mixture over it. Add remaining batter and top with the rest of the cinnamon swirl mixture.
- Use a knife to gently swirl through the batter for marbling effects.
- Bake for 35-40 minutes or until a toothpick comes out clean.
- Allow to cool completely before glazing with powdered sugar mixed with milk and vanilla.
