  • 1 cup mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup granulated sugar for cinnamon swirl
  • 1 tbsp ground cinnamon for cinnamon swirl
  • 1 cup powdered sugar for glaze
  • 2 tbsp milk for glaze
  • 1/2 tsp vanilla extract for glaze

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, vegetable oil, eggs, buttermilk, and vanilla extract until smooth.
  3. In another bowl, sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Prepare the cinnamon swirl by mixing sugar with ground cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan; sprinkle half of the cinnamon mixture over it. Add remaining batter and top with the rest of the cinnamon swirl mixture.
  7. Use a knife to gently swirl through the batter for marbling effects.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Allow to cool completely before glazing with powdered sugar mixed with milk and vanilla.
