Ingredients
- 2 lbs chicken thighs or breasts, cut into 1" cubes
- 2 tbsp cornstarch
- 1 cup water
- 1/3 cup brown sugar
- 1/3 cup low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tbsp fresh ginger, minced
- 1 tbsp honey
- 1/2 tsp sesame oil
- Sesame seeds and chopped green onion for garnish
Instructions
- Prepare the teriyaki sauce by mixing cornstarch and water in a bowl. In a saucepan, combine remaining ingredients with the cornstarch mixture. Bring to a simmer, stirring until thickened. Let cool.
- Marinate the cubed chicken in half of the sauce in a ziplock bag for at least 30 minutes.
- Preheat grill to medium heat and skewer the marinated chicken pieces.
- Grill skewers for about 20-30 minutes, turning every few minutes and basting with reserved sauce during the last few minutes of cooking.
- Garnish with green onions and sesame seeds before serving.
