  • 2 cloves garlic, crushed
  • 1 lime, zest and juice
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tsp sugar
  • 1 tsp chili powder
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp dried oregano
  • pinch of cayenne
  • 8 mini cucumbers, halved and sliced (about 2.5 cups)
  • 1 15.25 oz can of corn, drained
  • 1/3 cup fresh cilantro, chopped
  • 1 small jalapeno, finely diced
  • salt and pepper to taste
  • queso fresco or cojita cheese (optional)

Instructions

  1. In a mixing bowl, combine minced red onion with lime zest and juice, adding salt and pepper. Let it macerate for 5 minutes.
  2. Meanwhile, prepare the vegetables: slice cucumbers, drain corn, wash cilantro, and dice jalapeno. Place them in a serving dish.
  3. To the marinated onions, add crushed garlic, mayonnaise, sour cream, sugar, chili powder, paprika, cumin, oregano, cayenne, salt, and pepper. Whisk until smooth.
  4. Pour the dressing over the veggies and stir gently until well-coated. Serve immediately or chill for 30 minutes for enhanced flavor.
