  • 1/2 cup salted butter, melted
  • 24 oz cream cheese, room temperature
  • 1 cup light brown sugar
  • 1 cup heavy whipping cream
  • 4 oz semi-sweet chocolate chips
  • 1/4 cup pecan chips
  • 2 cups sugar
  • 5 tbsp all-purpose flour, sifted
  • 3 tbsp brown sugar
  • 6 tbsp heavy whipping cream
  • 3 tbsp all-purpose flour
  • 1 cup sour cream
  • 1 1/2 tbsp vanilla extract
  • 3 large eggs
  • 2 oz semi-sweet chocolate chips
  • 3 tbsp heavy whipping cream

Instructions

  1. Prepare the caramel sauce by melting sugar in a saucepan until amber. Add butter and cream; whisk until smooth.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust. Bake at 325°F for 10 minutes.
  3. Pour caramel sauce mixed with flour and pecans into the crust. Melt chocolate chips in heated cream; pour over the caramel layer.
  4. Beat cream cheese with sugar and flour until smooth. Mix in sour cream and eggs gradually.
  5. Pour cheesecake batter over the chocolate layer and bake in a water bath at 300°F for about 1 hour and 35 minutes.
  6. Cool gradually in the oven, then refrigerate until set.
