- 2 cups graham cracker crumbs
- 1/2 cup salted butter, melted
- 24 oz cream cheese, room temperature
- 1 cup light brown sugar
- 1 cup heavy whipping cream
- 4 oz semi-sweet chocolate chips
- 1/4 cup pecan chips
- 2 cups sugar
- 5 tbsp all-purpose flour, sifted
- 3 tbsp brown sugar
- 6 tbsp heavy whipping cream
- 3 tbsp all-purpose flour
- 1 cup sour cream
- 1 1/2 tbsp vanilla extract
- 3 large eggs
- 2 oz semi-sweet chocolate chips
- 3 tbsp heavy whipping cream
Instructions
- Prepare the caramel sauce by melting sugar in a saucepan until amber. Add butter and cream; whisk until smooth.
- Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust. Bake at 325°F for 10 minutes.
- Pour caramel sauce mixed with flour and pecans into the crust. Melt chocolate chips in heated cream; pour over the caramel layer.
- Beat cream cheese with sugar and flour until smooth. Mix in sour cream and eggs gradually.
- Pour cheesecake batter over the chocolate layer and bake in a water bath at 300°F for about 1 hour and 35 minutes.
