- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- ½ teaspoon espresso powder for icing
- 2 to 3 tablespoons milk
Instructions
- Brown the butter in a medium saucepan until golden amber. Let cool.
- Mix brown sugar into cooled butter until combined. Add eggs and vanilla bean paste; mix until smooth.
- Whisk dry ingredients in a separate bowl. Gradually combine with wet mixture until just mixed.
- Chill dough for 30 minutes while preheating oven to 350°F (175°C). Prepare a cookie sheet lined with parchment paper.
- Scoop dough onto the sheet, leaving space between each cookie.
