  • 1 to 2 tablespoons espresso powder
  • reserved brown butter for icing
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon espresso powder for icing
  • 2 to 3 tablespoons milk

Instructions

  1. Brown the butter in a medium saucepan until golden amber. Let cool.
  2. Mix brown sugar into cooled butter until combined. Add eggs and vanilla bean paste; mix until smooth.
  3. Whisk dry ingredients in a separate bowl. Gradually combine with wet mixture until just mixed.
  4. Chill dough for 30 minutes while preheating oven to 350°F (175°C). Prepare a cookie sheet lined with parchment paper.
  5. Scoop dough onto the sheet, leaving space between each cookie.
  6. Bake for 10 to 12 minutes until slightly golden at the edges. Cool on wire racks.
  7. For icing, combine reserved brown butter with powdered sugar, espresso powder, vanilla extract, and milk until smooth. Dip cooled cookies in icing and set aside.
