  • 1 lb potatoes (peeled and diced)
  • 2 large carrots (peeled and chopped)
  • 1 cup celery (chopped)
  • 1 cup green beans (cut into bite-size pieces)
  • 1/2 cup green onions (chopped)
  • 1/4 cup parsley (chopped)

Instructions

  1. Preheat a heavy soup pot or Dutch oven with olive oil over medium-high heat. Add the beef in a single layer and brown on all sides.
  2. Stir in onions and cook for about 3 minutes until softened.
  3. Add beef broth, canned tomatoes, bay leaves, salt, and pepper. Bring to a boil, then reduce heat to simmer for about 55–75 minutes until beef is tender.
  4. Incorporate potatoes, carrots, and celery; cook for an additional 20 minutes until vegetables are tender.
  5. Finally, add green beans and green onions, simmering for another 10 minutes.
  6. Stir in parsley before seasoning to taste with salt and pepper.
