  • 1/2 cup Panko breadcrumbs
  • 1/3 cup white whole wheat flour
  • 1/4 cup grated Parmesan cheese
  • 2 large egg whites
  • olive oil nonstick spray

Instructions

  1. Preheat your oven to 425°F. Prepare a rimmed baking sheet with nonstick spray.
  2. Slice zucchini into sticks and pat dry using paper towels to remove excess moisture.
  3. In one bowl, whisk egg whites until foamy. In another bowl, combine Panko, flour, Parmesan, salt, onion powder, and pepper.
  4. Dip zucchini sticks in egg whites then coat in the Panko mixture.
  5. Place on the baking sheet without touching each other. Lightly spray tops with olive oil.
  6. Bake for 10 minutes, flip fries and spray again; bake an additional 10 minutes until golden brown.
