Instructions
- In a large stockpot over medium-high heat, cook the sausage until browned. Remove with a slotted spoon and reserve some grease.
- Sauté onions in the reserved grease for about 5 minutes; add garlic and cook for another minute.
- Stir in potatoes, chicken stock, and cooked sausage. Simmer for approximately 10 minutes until potatoes are tender.
- Add kale and heavy cream; simmer for an additional 5 minutes. Season with salt and pepper to taste.
- Serve warm, garnished with crumbled bacon.
