  • 1 ½ cups confectioners' sugar

Instructions

  1. Preheat oven to 350°F and line a greased baking pan with parchment paper.
  2. Whisk together flour, spices, salt, and baking soda in one bowl.
  3. In another bowl, beat egg yolks until thick; add molasses and melted butter.
  4. In a separate bowl, whip egg whites until soft peaks form; gradually add sugar.
  5. Gently fold the egg whites into the yolk mixture followed by the dry ingredients until just combined.
  6. Bake for 9–12 minutes until set; cool on a tea towel dusted with confectioners' sugar.
  7. Prepare the filling by mixing cream cheese, butter, vanilla, crystallized ginger, and sugar until smooth.
  8. Unroll the cooled cake gently, spread the filling evenly, then roll back up without the towel.
