  • 1 egg
  • 1/3 cup parmesan cheese (finely grated)
  • 1/3 cup Italian breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil
  • 1/2 cup onion (finely diced)
  • 2 stalks celery (sliced)
  • 2 carrots (peeled and diced)
  • 15 ounce can crushed tomatoes
  • 16 ounce can tomato sauce
  • 6 cups beef broth
  • 3/4 cup dry short pasta
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat the broiler to medium-high heat and coat a sheet pan with cooking spray.
  2. In a mixing bowl, combine ground beef, garlic, Italian seasoning, egg, breadcrumbs, parmesan cheese, salt, and pepper. Mix until just combined.
  3. Form meatballs and place them on the prepared sheet pan. Broil for 10-12 minutes until browned.
  4. In a large pot over medium heat, sauté diced onion, celery, and carrots in olive oil until soft.
  5. Add crushed tomatoes and beef broth to the pot. Stir in additional Italian seasoning and season with salt and pepper.
  6. Bring soup to a gentle boil and add cooked meatballs along with the dry pasta. Simmer for about 10-12 minutes until pasta is tender.
  7. Serve hot garnished with fresh parsley.
