- 2 carrots (peeled and diced)
- 15 ounce can crushed tomatoes
- 16 ounce can tomato sauce
- 6 cups beef broth
- 3/4 cup dry short pasta
- 2 tablespoons fresh parsley (chopped)
Instructions
- Preheat the broiler to medium-high heat and coat a sheet pan with cooking spray.
- In a mixing bowl, combine ground beef, garlic, Italian seasoning, egg, breadcrumbs, parmesan cheese, salt, and pepper. Mix until just combined.
- Form meatballs and place them on the prepared sheet pan. Broil for 10-12 minutes until browned.
- In a large pot over medium heat, sauté diced onion, celery, and carrots in olive oil until soft.
- Add crushed tomatoes and beef broth to the pot. Stir in additional Italian seasoning and season with salt and pepper.
