  • 1/4 cup granulated white sugar
  • 1/2 cup canned pumpkin puree
  • 1 3/4 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 3/4 cup unsalted butter
  • 2 egg yolks
  • 2 tsp vanilla extract

Instructions

  1. Prepare the cream cheese filling by mixing cold cream cheese, sugar, and vanilla until smooth; refrigerate.
  2. Preheat oven to 350°F (175°C). In a bowl, combine sugar, pumpkin pie spice, and pumpkin puree.
  3. In a separate bowl, cream together softened butter and brown sugar until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually add dry ingredients (flour, baking powder, baking soda, salt) to the creamed mixture; combine until smooth.
  5. Scoop about one tablespoon of dough, flatten it slightly in your palm, place filling in the center, and fold edges over.
  6. Roll in pumpkin spice sugar and place on a lined baking sheet.
  7. Bake for about 12 minutes or until edges are lightly golden. Cool before serving.
