- 4 tbsp Butter
- 1/3 cup Freshly Grated Parmesan
- 2 cloves Garlic (finely diced)
- Handful of Fresh Basil (finely diced)
- Pinch of Chili Flakes (to taste)
- Salt & Pepper (to taste)
Instructions
- Grate the fresh tomatoes into a bowl using a box grater; discard the skins.
- In a large pan, melt 3.5 tbsp of butter over medium heat. Add garlic and chili flakes, sautéing until fragrant.
- Stir in the grated tomatoes and season with salt and pepper. Simmer for about 15 minutes until thickened.
- Cook spaghetti in salted water until al dente; drain.
- Toss the cooked pasta into the sauce along with remaining butter, basil, and Parmesan. Adjust sauce consistency with reserved pasta water if necessary.
- Serve hot, garnished with extra basil or Parmesan as desired.
